Not Your Mammas Grilled Cheese

I am always trying to think of new ways to delight my vegetarian daughter.  I made her a veggie panini!  First I sauteed up some veggies.  I thinly sliced some zucchini stirred it around in a pan with olive oil, garlic and salt and pepper.  When it was softened I added some fresh spinach and chopped roasted red pepper (from a jar) and heated it all through.

I got my panini press nice and hot.  Put the veggies on a nice piece of Italian bread and topped them with sliced fresh Mozzarella cheese and a second piece of bread, just like a grilled cheese.

Pressed the sandwich til it was golden and toasty.

She said it was delicious!

321 Cake

Okay…. THIS IS GREAT.   My sister tried this and bugged me until I tried it.  It is delicious and simple.  It comes out to 2 points in in WW lingo.

1 package of enriched pudding type white or yellow dry cake mix

1 package of White Angel food cake (the add water only kind)

Dump each box of dry cake mix into a zip lock bag and mix well.  To use:  measure out 3 TBSP mix into a microwave safe coffee mug and add 2 TBSP water.  Microwave on high for 1 minute.  Top with fat free cool whip and some fresh fruit.  The 2 points is for the cake alone but it is delicious.  TRY IT!

No oils, sprays, eggs, or fats and it is YUMMY!  Makes one serving at a time that is perfect to fit into that sweet tooth.  No desire to eat the whole cake!

Easter Eggs!

The girls still wanted to color Easter eggs.  When they were little I used to take the wax crayon that comes with the kit and write things on the eggs and put them back in the carton.  When they would take the egg out of the color and it had their name on the egg they were amazed.  I would tell them that the Easter Bunny must have been here and magically put their name on the eggs!  They were so excited!

Shopping!

If you have never gone to TJ-Maxx with 3 daughters you have missed out on a unique experience.  Well if you go you should always make sure you take Lindsay (the shopping expert) with you.  We did pretty good, the girls got some new summer clothes, shoes, and sunglasses.  We put it all in lay-away and will buy gift cards at Giant Eagle to pay it off.  We got some great deals and will get money off gas.  Thanks to Lindsay I got a pair of Dolce and Gabbana sunglasses for $40.00.  Lindsay says they retail for… well lets just say a lot!  We were for sure Maxinistas!

They always look great and never pay full price!
