HEALTHY FAMILY 101

Summer is time for SANGRIA

Take a bottle of your favorite inexpensive white wine.  Pour it in a pitcher and add 1/4 cup triple sec, 1/4 cup simple syrup, 1 can of lemon lime soda.  Then get creative with any seasonal fruit you like cut into bite sized pieces!

Pour over ice and enjoy!

Perfect for a sipping by the pool or curled up with a good book on the porch.  Brightens up any day or night!

Flea Market Sunday

Went to a flea market this morning.  Bright and early.  The weather was gloomy but the produce was great.  I bought some cilantro plants to put in my garden because the ones I tried from seed didn’t fair so well.

I bought beautiful lettuce, celery, mushrooms, cherries, strawberries, grapes, onions, tomatoes, broccoli, and red peppers.

Hmmm, what to make.  Well i already fried up those mushrooms in some butter for breakfast and they are all gone!

Tomorrow I will rub those red peppers with some olive oil and char them to remove the skin.  I will grille the eggplant slices and tomatoes.  Chop up the delicious grilled veggies and toss them with some linguine, garlic and more olive oil.  Top the pasta with fresh mozzarella!

Not Your Mammas Grilled Cheese

I am always trying to think of new ways to delight my vegetarian daughter.  I made her a veggie panini!  First I sauteed up some veggies.  I thinly sliced some zucchini stirred it around in a pan with olive oil, garlic and salt and pepper.  When it was softened I added some fresh spinach and chopped roasted red pepper (from a jar) and heated it all through.

I got my panini press nice and hot.  Put the veggies on a nice piece of Italian bread and topped them with sliced fresh Mozzarella cheese and a second piece of bread, just like a grilled cheese.

Pressed the sandwich til it was golden and toasty.

She said it was delicious!

321 Cake

Okay…. THIS IS GREAT.   My sister tried this and bugged me until I tried it.  It is delicious and simple.  It comes out to 2 points in in WW lingo.

1 package of enriched pudding type white or yellow dry cake mix

1 package of White Angel food cake (the add water only kind)

Dump each box of dry cake mix into a zip lock bag and mix well.  To use:  measure out 3 TBSP mix into a microwave safe coffee mug and add 2 TBSP water.  Microwave on high for 1 minute.  Top with fat free cool whip and some fresh fruit.  The 2 points is for the cake alone but it is delicious.  TRY IT!

No oils, sprays, eggs, or fats and it is YUMMY!  Makes one serving at a time that is perfect to fit into that sweet tooth.  No desire to eat the whole cake!

Easter Eggs!

The girls still wanted to color Easter eggs.  When they were little I used to take the wax crayon that comes with the kit and write things on the eggs and put them back in the carton.  When they would take the egg out of the color and it had their name on the egg they were amazed.  I would tell them that the Easter Bunny must have been here and magically put their name on the eggs!  They were so excited!

Shopping!

If you have never gone to TJ-Maxx with 3 daughters you have missed out on a unique experience.  Well if you go you should always make sure you take Lindsay (the shopping expert) with you.  We did pretty good, the girls got some new summer clothes, shoes, and sunglasses.  We put it all in lay-away and will buy gift cards at Giant Eagle to pay it off.  We got some great deals and will get money off gas.  Thanks to Lindsay I got a pair of Dolce and Gabbana sunglasses for $40.00.  Lindsay says they retail for… well lets just say a lot!  We were for sure Maxinistas!

They always look great and never pay full price!

140.8… I figured you were all waiting to hear!

Not too bad for vacation.   Now I have to lose 5 pounds.  Keep check of your weight once a week.  Don’t check everyday.  Once a week will let you know how to plan for the week ahead.  If you are where you want to be just keep doing what you are doing but if you want to lose a few pounds that will take some planning.  Eat less and exercise more.

The Cozumel trip was beautiful but really too much food.  Abundance of food already prepared for you is not a good thing for keeping a healthy weight.  But once a year… have fun!  Work it off later!

 

Stick to the food God gave you naturally, watch your portion sizes, get some exercise daily and you will be bikini ready in no time!

Vacation!

As I am getting ready to go on a well deserved vacation filled with sand, sun, relaxation, and of course all the food and drink you could want, I can’t help but think how many pounds heavier I will be when I return.  Of course it would be a miracle to come back with less weight!  Can it happen?  I am about to find out.  I weighed in at 136.8 pounds this morning!

Here are some tips I plan to arm myself with while I am enjoying every minute of Cozumel!

Breakfast there is amazing… everything and anything you could want.  I do plan to eat a lovely fresh made omelet and some fresh squeezed juice (with a drizzle of champagne) every morning for breakfast but I will avoid the bread, pastries, pancakes and other such sugar filled goodies.  Fresh fruit on these islands is AMAZING.  I will definitely fill up on fruit!

Lunch is also a free for all but I am going to aim for salads and lean meats.

Dinner… OMG  Dinner is usually 4 or 5 courses!  HELP!

Looks like my action plan is to WALK WALK WALK the beach!  It is so beautiful with white powder sugar sand and turquoise water, I may just walk the beach all day.

The drinks are over flowing too!  I will need to make sure I drink A LOT of water… bottled of course or Montezuma’s revenge will have me slim and dehydrated in no time. 

Well that is my plan.

How many pounds heavier do you think I will be in a week from today?  Time will tell!

If you fail to plan… then plan to fail

Staying healthy takes planning. Here are some planning tips…
Never let your self get famished ,,, have a snack
Don’t buy junk food… buy and cook real food
Shop the perimeter of the grocery store. Fresh produce meats and dairy
Plan meals and snacks in advance
Take a snack with you
Always carry water
Bring home fruits and veggies and get them washed and cut and read to grab in a hurry!

DO NOT GRAB THAT BOX OF GIRL SCOUT COOKIES!

Nothing tastes as good as skinny feels!
